Mint Feta Olive Cucumber Skewers

One of my favorites and so fresh and easy.


1 cucumber

Jar of seedless calamata olives or your favorite green olives

8 oz chunk feta cheese not low fat too crumbly

Fresh Mint

Cut cucumber into quarters length wise and then into 1 inch chunks

Cut feta length wise in half then cut across both ways into quarters (you should end up with 1 inch chunks)

Separate mint leaves from stem and drain olives

Taking a four-inch skewer put on an olive, feta wrapped in mint leaf and finish with a cucumber. Arrange clockwise on platter.
