8 cups of fruit ( watermelon, grapes sliced in half, sliced strawberries, blueberries, raspberries, blackberries, pineapple, mangoes or peaches)

1 bunch of mint

1 bottle of kombucha

2-4 tablespoons honey

Fresh ginger grated

Cut fruit and put in bowl. Mix kombucha and honey with ginger if desired. Toss fruit with dressing and mint. Refrigerate for several hours.

One of our owners, Cheryl Jaskot, came up with this recipe for one of our Thursday lunches...here is the back story and her description of how to make it in her words : One Thursday I went to make our fruit salad and I had no lemons or limes to blend with the honey to dress the salad. We looked all over the refrigerator and I saw we had a ginger kombucha drink. I mixed the bottle with 2-4 tablespoons honey and a tart flavorful dressing was made. I dress the fruit several hours ahead of time so the berries have time to juice. Pick any of the fresh berries available, watermelon, pineapple and grapes. Pay attention to different colors for a beautiful salad. I also added a 1/4 cup mint, and if you want more spice, grate an inch of ginger to add to honey and kombucha. Enjoy!
