Chimichurri Sauce for Steak

1 bunch fresh parsley

8 cloves garlic, minced

cup olive oil

cup sherry or red wine vinegar

teaspoon ground black pepper

tsp. cayenne or red pepper

1 Tbsp. shallots or onions

In a food processor, combine all the ingredients. Pulse until chopped but not pureed.

Can be made a day ahead of time but refrigerate and bring to room temperature before serving.
